Can I do a dungeon without completing the quest and accept it at a later time?

Sorry if the answer is obvious, but basically, I'm on my 7th character and I still haven't experienced any of the dungeon quests because everyone just wants to skip through and complete it all fast-like. Which is fine, I like completing dungeons fast too. But at some point, I'd like to go slow down and actually pay attention to the story, and I'll likely just go back and solo them on my own time to not inconvenience others, or risk someone skipping ahead. But I also still want to do my daily random dungeon. Which leads me to my question: Can I not accept quests in dungeons and save them for a later time, still get credit for completing the dungeon, and are there any dungeons that don't give you a choice? As in, you automatically accept/start the quest when you enter it?

If you complete the dungeon, but don't complete the quest and then exit, the quest will reset to the beginning the next time you enter and you'll have start all over again.
