Clannfear would be great for sorc tanks if the cost was in-line with Green Blood, the DK equivalent. Instead, it's something like 7k Magica per squeeze.
It's definitely not for the self-heal; too high cost.
A lot of new players dont really care/ havent leant all the mechanics of the game and probably just like the dinosaur.
Tho im pretty sure sorc pets scale solely with max magicka.
I use the Clanny purely because I like him, I like the Twilight Matriarch too, some of us don't really care for all this min maxing nonsense and prefer to enjoy the game play and for most content that's perfectly fine.
That being said my pet bar is my back bar and when I want to take care of things in a brusque and business like fashion I swap to my front bar but I enjoy it less than running with the Clanny.
A quick bar swap to unsummon the pets is also handy for when I get to town and then my flappy thing doesn't annoy other players.

Clanfear does dual role. Both tank and healer. I know a solid player who solo DLC veteran bosses on hard mode and imperial city bosses , DLC world bosses like an easy cheese. He always uses clanfear. He has high health of 30K with 30K solid single target & 60k multi target sustained dps. Clanfear AI is solid and easy to control than stupid matriarch or tormentor or bird or whatever it is . Matriarch AI is downright stupid and completely unreliable. I will name it twilight betrayer. Clanfear is invaluable on solo play. AI is pretty solid and reliable , provided you know how to control and pull the aggro.
If you are talking about PVP its different story. I dont know why so many noobs are using though.

Clannfears are super cute - in my opinion, the cutest monsters/creatures in this game They look funny, they sound cute - their footsteps, their idle noises, their battle cries
Before nerfs, more than a year ago, I used to use Clannfear on my mag and stam sorcs as portable tank - he never lost aggro and hardly ever died to bosses or adds. On magsorc I also used Twilight Matriarch as portable healer - so when I went in dungeon alone, I actually went in team of 3
I also used him on stamsorc for some time after One Tamriel; he was my notable companion in my adventures with Dark Brotherhood quests and dailies - it was hilarious to sneak together with Clannfear! And if I was spotted and guard started chasing me, my brave Clannfear risked his life while I successfully run away
Even after pet nerfs (I think it started with Homestead), I still have skill points invested in Clannfear on my stamsorc - sometimes I summon him to kill critters for me, and I feel like a hunter with a hound
Memory of our great adventures together is all that's left Now he is squishy, fails to hold aggro properly, and can't remain in passive state as commanded because after you do heavy attack he starts fighting again.

I dont think he soled any of them you mentioned due to mechanics not allowing. He soled imperial prison & falkreath though. But, he soled last boss of fang lair & blood forge on hard mode. He killed the boss from around 75 percent health to 0 with no one around to heal or tank.
He himself have 30k health with 30k dps single target sustained. He controls and uses the clanfear to tank main boss. He controls like an easy cheese.
