What class do you find the most satisfying to kill in pvp?
I voted Nightblade. But seeing as I run a Templar in full Healer spec, I'm pretty darn thrilled if I get the killing blow on ANYTHING. But, man, spamming Magelight while chasing a Nightblade who is trying to stealth away...hilarious. Especially since that's ALL they try to do instead of just turning around and ganking my squishy butt.
Sorc, just because I have the most trouble fighting then so when I win I feel like I did a really well fought battle. Also helps me gauge my skills as they increase.
I think I still have magicka Sorc hate from before crystal frags got nerfed. But there’s just soemthing about those pesky, jumping, shield spamming, burst stacking, stick wielders.
1) The cheapest class (Lethal Arrow spam from stealth is wretch inducing)...
2) The most cowardly class (if gank attempt fails, run away while attempting to Cloak out)...
3) The most OP class (due to the combo of the best Class Ult, best escape ability, while being able to fully spec into damage)...
4) The class most often used as a crutch to cover for a lack of skill...
Add it all up and Nightblade is almost universally hated and despised...
Nightblades, closely tied with Sorcs. It's not the class, but rather the mentality that comes with its preferred playstyle.
Ambush, hit and run, control-heavy playstyles are often perceived as "cheap" on the receiving end, so it's super-satisfying to catch and smack down this "dishonorable swine".
Other than that, my guilty pleasure is killing 1vXpotatoes "heroes".

Sorc. Their streaking away, shield stacking and bouncing whilst chucking weak little pebbles and a static shock annoy me. They aren't OP or anything and need a buff, no longer can a single petsorc treevp 10 players. But shields are infuriating to play against.
They are also very squishy when shields are down, so it's satisfying getting a 7k whip+light+bash combo and finishing with an 8K leap in a cancer tank build.
I prefer killing an NB, because you know they are the FOTM Xv1 heroes, but the actual finisher is more satisfying on a sorc.
Wardens. Because that Kill Enemy Wardens quest still takes a long time so there's something great about seeing that counter scroll across the screen Especially when we hit a group with a bunch of wardens.

Ah yes, who doesn't like the thought of turning the tables on an assassin and actually killing them instead.
But I am a Nightblade and know Nightblade tricks and thus is easy to kill so there's no thill in that to me. They are but pesky flies on the battlefield.
But DKs. Now that is a worthy opponent.
A class meant to take hits and run me out of my resources and then dishes that damage back at me. The DOTs that eat right through my shield. Yes. Worthy opponent indeed. It's like David and Goliath. My baby Mageblade who fights openly (uncloaked) finds killing a DK a blissful defeat.

Nothing is more satisfying than playing in organised group without destro ult and wiping AP farm bomb trains.
Killing every class solo is equally satisfying, so I can't pick.
