Lore wise who is the most powerful boss we fight

I personally see Molag kena or velidreth but are the celestials stronger not from a gameplay perspective but from a lore perspective and no molag bal doesn't count

Aside from molag ball, Mannimarco is the strongest boss encounter in game. Though he is not at the height of his power during his fight with the vestige, he would have still killed him, if it weren't for bal's intervention (preventing him from becoming a lich).

Mannimarco goes on to gain his lichdom, defeats the only psijic to ever rival his power (Vanus Galerion) and achieves divinity. I think he's without a doubt one if the most powerful encounters (though the fight itself isn't hard).

Also, I think velidreth is just a servant of Mephala, and since his/her/its death didn't even bother Mephala to show up (in contradict "The mistery voice" when you defeated Nerien'eth is clearly Mephala herself).

I donno about Molag Kena, tho since we have Molag Grunda as Molag Bal's "daughter" she is probably one as well, but her power level is unknown, but I don't think is on pair with Barbas
