I've found the Sorcerer class to be wonderful, but I can never create a character I like for it. Theodore Hearthside was definitely more suited as a Templar. I mean, Theodore means "Divine Gift" and Hearthside literally means "by the Fire".They deletion tokens refresh extremely quickly. Like 48-72 hours or somewhere around there. I do the same thing as you, and I've learned that just jumping in head first is the best thing to do. Honestly, if you complete the majority of quests in each preceding zone, you'll find recurring characters with quests that continue their previous quest, or find themselves in similar situations. As you said, many times the outcome will be the same, but if you don't know yet, the dialogue choices highlighted in red represent important decisions that will affect that person or you in some permanent way. Either way, it's always pleasant to see old characters that you've done quests for before that give you some exposition on what they've been up to since you've last seen them.
I believe some of those "important" decisions do affect the main quest line towards the end.
Plus there's the champion system to even further tailor your character. Also, respeccing is rather affordable, and you can buy name/appearance tokens if necessary, but your collection tab (u on PC) gives you quite a bit of customization options without needing an appearance change token.
TL;DR: The game is extremely flexible, with a lot of fun hidden/subtle nods towards those who thoroughly explore the zones. Find a class that feels right and try to just play without a plan (a lot easier said than done, I know), and go out and experience the ESO universe!

I really want to create an Undaunted Vampire Sorcerer Breton, but can't come up with a good name that meets my usual conventions. I'm thinking something to do with Gluttony, since it'll be all about consuming the blood of my enemies.

When skimpy outfits are released in the crown store, this guy won't equip them on a cute elf, he will use them on the in game version of himself. So he can admire his character in all his "thiccness".
I know it shouldn't, but Shor's Bones it really does. Thankfully the support team is so awesome. They fixed it one time, after I contacted them about it.
