Hi Bri. I'm sure we'll all get to know you a little better over the next few months. General's the best spot to ask questions about the game, and the forum in general has a good amount of information tucked away to give you a head start some of the older players may not have had.
Some names to be aware of are Asayre, Alcast, and Gilliamtherogue.
You see any posts by them, they're some of the more informative people on the mechanics of the game at large.
As a general rule of thumb though, take anything you hear on the forum with a grain of salt. People act very differently on here than they do ingame. Trust, but verify.

Skyrim and ESO share some similarities in gameplay, and they're also very different in others.
The best advice I can give you is to keep an open mind when you go to really craft your identity in this world. There's always going to be someone who knows something you or I don't. And plenty more who know less, but that's just because we haven't gotten to them yet.

Just started myself 3 months ago, after about 400 hours i just feel like i scratched the surface of this game and all the possibilities of learning and playing this game. You sure have a lot of fun ahead of you. You cant always stress yourself in life, so nothing wrong with relaxing once in a while and playing. Best wishes!0 -

It just means in Cyrodiil (pvp), when u die usually you run from keep to keep on your mount (horse etc).
And being new to the game, you'll be targeted and probably die a lot, hence the horse simulator.
Just stay in a zerg when u play pvp is my advice to newer players and don't leave the zerg, gankers like to pray on the poor zerglings.
Zerg - big group of players
Zergling - a person from a zerg who is easy to kill by themselves
Ganker - a person who hides in stealth and takes out easy kills
