If I have the physical copy of Morrowind and say trade it in towards the physical copy of Summerset. Will I still have access to Morrowind?

Well it's just the key you need to access morrowind and that is bound to your eso account . So I'd imagine you can do what ever you want with disc.

Edit. The disc alone won't give someone else access to morrowind.
