Best crafted and non-crafted Tank and DPS sets?

As the title says, i'm curious what the best crafted and non-crated tank and DPS sets are. I'm running a DK tank with a focus on health, and with a focus on stamina when i switch to a DPS build.
I'm nearing level 50 on my DK tank, using heavy armor and sword and shield. However, i also want a medium armor, stamina-focused dual wield DPS build for when i'm playing solo for world exploration and questing.
So, what are the best crafted and non-crafted sets for this setup? I was looking at Orgnum's Scales for the crafted tank set but wasnt sure about it. I wanna get a good crafted set going while i work toward obtaining good non-crafted sets from dungeons and world bosses.
