Need Help With Build Setup PLEASE

So i have previously returned to ESO in the last couple weeks from playing it originally a lot and I need some advice on gear set combinations and set up etc. I only really play PVE and occasionally play PVP. I usually can be found running normal trials and vet dungeons or getting carried through vet trials sometimes.

I am currently 200CP and am primarily running a bow/bow build (i know it is not meta or even that viable in most peoples opinions, but i never bothered to get dual wield up and have only focused on bow primarily and assassination and stealth as that is the only thing that interested me and I know that annoys some people but that's not what i'm here for)

When i first started playing i pumped loads of time into crafting and can subsequently craft 7/8 trait items on most medium pieces and bow and i made a hell of a lot of sets of hunding's and NMG for other players and guild members so i built up a considerable amount of gold so I can afford to buy some nice sets and jewelry pieces but I need advice on maybe what to get and how to combine sets.

At the moment i have full 5 piece legendary (Gold) sets in: Hundings, Nightmothers gaze, Morag tong (with 3 x jewelry 2 gold rings and 1 purple neck), briarheart -
All in divines and with prismatic defence glyphs or max stam glyphs, and weapon damage glyphs for jewelry.

Weapons wise i have Legendary (gold) bows in: Hundings (nirn+wep damage glyph), Nightmothers gaze (nirn+wep damage glyph), Ayslum (precise + wep damage glyph).

When potted i have about 29.5k stamina, 18.5k health, 10k magicka.

and I can reach anywhere from 2950-3550 weapon damage with 55%-62% crit chance and I run Mundus stone the warrior. My skills are the usual poison based and self buffs like endless hail, snipes, volley, reapers mark etc

What out of my current gear and mundus set up etc should i be running for best possible DPS and endgame pve activities. And what other Armour or setups could i possibly invest in to make this better. I have heard and read that penetration sets like spriggans is good and VO is good (I am currently trying to obtain VO set 5 piece in divines from trials i have 2 pieces so far).

Any advice on this would be so beneficial and extremely appreciated!

You could check out Alcast's page for build examples and recommendations for "best possible DPS". He does a lot of testing with his builds. https://alcasthq.com/

Most importantly though: If you're seriously into endgame PVE, you need to lose the front bar bow. Bow/bow builds don't really cut it. DW/bow gives the best DPS, 2H/bow being the next best.

Armor BiS for stamina is usually 5xHundings, 5xTwo-Fanged Serpent or Spriggan, 2xVelidreth. Alternative monster sets are Stormfist or Selene, depending on circumstances.

Use the Lover mundus if you're not in a very optimized group where the tank and healer and other stam DDs reduce the boss to <7k resistance. You want 11+k penetration in random groups/other situations and be able to apply / have applied Major Fracture.
