Bone Pirate. Its not the worst option, its the best one if you set up your bars right, since it gives the best mix of both damage and sustain over the other sets.
Hint: Siphoning Attacks not Leeching Strikes.
ive tried pretty much the exact same build except that i dont have a master bow (wtb vdsa farm) with eternal and bone pirate.
bone pirate gives about 2-3k more stamina and very slightly more regen. eternal gives you the runes. dps wise id say they are more or less equal but bone pirate is slightly more burst and the bigger stam pool and slightly better regen make it abit easier to sustain. eternal makes kiting quite abit easier. tried both builds with 7 medium and 5 medium 2 heavy. i personally prefer bone pirate with 2 heavy blood spawn. still get like 2.5k stam regen pre potion and without relentless. with relentless + potion it goes up to ~3-3.1k. up to 3.4-3.5k after a kill. downside of both builds is the relatively low crit chance so you really wanna run shadowy disguise to force some crits. i even run atronach so i get almost 1k mag regen so i can spam it alot. both builds are absolutely viable.
i tried shacklebreaker aswell but imo its inferior to both bone pirate and eternal. its good for sustain but just not enough dmg on its own. havent tried hundings but i assume its quite good dmg wise since its also the only set out of those 4 that helps your crit chance but as you already noted sustain might be an issue.
if i had to rank the sets id say
bone pirate > eternal >= hundings > shacklebreaker

Shacklebreaker is crazy good because of the mag sustain.
If you don't have a vDSA staff, the next best choice would be 5 shackle 5 bone 1 kena.

we´re talking stamblade here. on magblade i agree shackle is very good. however on stamblade i rather run atronach mundus for the mag sustain and use bone pirate. i havent done the maths but im pretty sure that you and up with more overall sustain and dmg.
