The stamina choice is probably warden.
- Wardens have almost all the virtues of DKs.
- They have better and simpler self-healing.
- They have a class ranged attack, which gives you the option of not playing with a bow.
The magicka choices are probably sorcerer or templar.
- Both are strong.
- Both are good at self-healing, and indeed eventually make good dungeon healers. (The templar is better for that, but sorcerer is solid too.)
- Both have further strong aids to survival. For the sorcerer it's pet tanks, class shield, and Surge. For templar it's Puncturing Sweeps.
- Templar damage dealers naturally fight within melee range, but there are long-range options as well.
- Sorcerers naturally use pets, but there are non-pet options as well.
Pretty much what title says. I personally love my NB but a friend of mine who is just starting out has troubles liking the game as one in its current state.
We're looking for something that's fairly easy to get used to, isn't too frustrating to play, and can easily switch playstyles, and is overall fun to play without spending 100s and 100s of hours on it.
My guess was a DK, would you guys agree or recommend something else?
As far as races go something that would fit either a dunmer or khajiit.

Are the wardens great in both pvp and pve is his only question? @FrancisCrawford
