Coming back to look at ESO again - for DPS of a SOrc, NB and DK, which of these rely less on having to utilise the attack weaving?

Well NBs rely heavily on weaving because relentless focus bow proc does a lot of damage. DKs do well as heavy attack weaving builds.
Sorc will probably be your best bet.

Every class needs to do "attack weaving" if you want to reach what's considered okay DPS. But don't worry, it's much less difficult as it may sound or as you might remember it.

Just do a light attack before every skill. With a little practice you'll internalize the timing and do it in your sleep.

May sound really funny, but having had a Commodore 64 back then as my first computer, and (still) playing games on it, I used the rhythm of the poking sticks coming out of the ceiling and ground in the game Antiriad as the "metronome" for my LA-skill weaving.

But if you like lightning. I love seeing everything go peeew. On a serious note, Sustain/TTK MagSorc seems fine and I'm not referring to end-game DPS but NB as fun as they are, their DPS has a much higher skill cap than Sorc.
