I very much would like to see brought back to the crown store is the white polar bear mount and non combat pet polar bear cub.
I also very much would like to see the frost mare hourse mount that was a limited time offer brought back as well but hopefully not in the crown crates.
I was surprised they didn't bring back the snow bear for the New Life festival this year. There is literally an event in it called the Snow Bear Plunge.
But I expect it's because they're planning on putting them in Crown Crates in 2018.
Really do not care for the crown crate and spend a bunch of crowns for alot of usless stuff but they probably will not be going away anytime soon. If they do that which would be really lame, their is a small chance to get them by spending crowns for mostly junk, they need to just bring back these 2 as limited time mounts so that those who missed out the 1st time will get them which is a win win for both.

Of course we all know that any mount which a large numbers of players express a desire for in these forums, eg. stag / elk, will end up in the crown store with a ridiculous price tag on it.
Your best bet is to say nothing about what you want. Mount options are infinite. Eventually they may create the one you want and if it hasn't avidly requested, at a reasonable price.
My only request was a unicorn and I see that cheeky datamine. (I hope the little imagine isn't just horse armour...). Don't let me down ZOS... don't let me down.
All the usual ride-able critters aside (We still have some left to mount... spiders, boars, giant goats...)
What I really would love to see are magical mounts. Like... floating broomsticks, floating carpets, floating driftdisks, floating thrones, floating mortat and pestle... etc. No flying, just a little hovering off the ground...
Possibly even an "carried by bat swarm" mount for vampires... you know, like:
And I really always wanted something like the D&D "Obsidian Steed" for eso. I mean, we have fire mounts for the pyromancers, frost mounts for the cryomancers, lightning mounts for the stormcallers, nature mounts for the druid wannabes, clockwork mounts for the aspiring artificers... why no dark crystallic mount for the dark magic sorcerors as well?
And I definitely would also like to see a ogre or half-giant "mount" giving piggyback rides to characters (...without saying "hodor" though, that one would be iffy, licensing-wise. As would be naming your mount "blaster" if your character was named "master"... but the general concept is sound!)
Oh, and slave-carried palaquins, for those telvanni among us. Just imagine, there could be several different versions... borne by muscular redguards or sturdy argonians, barbaric reachmen or nubile breton beauties... I can think of many jerk... uhm... people opf questionable morals who might want that. (but just think of how much fun it would be ganking them in cyrodil, especially if their palaquin carriers are of your characters race... "Freeeedom!")
And chariots. One-man racing chariots would be -so- nifty for imperial characters, right? And nord husky-pulled snow sledges for those really cold parts of skyrim... and breton farmers donkey carts... and... and...
Of course, two-person battle chariots where one drives and the other shoots arrows/magic would be just as interesting, though possibly a bit hard to code...
And while we're talking multi-person mounts... IF they ever get that coded, I would also love to see big "siege mounts". Mammoths. Wammasu. War wagons. Heavy chariots. Dwemer siege engines. Whatever... multi-person battlefilnd combined mounts/siege engines, with one driver, one gunner, and maybe two more ranged attackers for close-in defense...

I want a gryphon w/ eagle head. Would look like an elite AD/high elf mount. Gryphon feathers are in tes lore, so surely there must be gryphons!
It doesn't have to fly (WoW gryphons are a great example)
Lore wise they might nlt be able to fly when mounted?

That way high level characters can help new players, and groups can run better together.
Cyrodiil riding simulator can be off putting for new players, and its annoying to be dragged down by slow team mates - not to mention that one guy who gets ganked on his slow mount every time
