this one seems pretty interesting - how would you fight from range though?

Don't worry about Shacklebreaker. Don't look to DD for your sustain, unless you are uncommonly good at line-of-sighting and getting it off. But even then, good players will more than likely come around and bash you, because DD takes disgustingly long to work now.
And don't look to streak as your main CC, unless you're running with a group. You can't sustain it very well, even with Shackle, but especially not without. And it does no damage. Werewolf hide isn't a great option IMO because you just don't need the ulti gen. You already have discounted ultimates, so you're close to parity with someone with a bit more ulti gen than usual. And the only ulti you're going to run is DBoS, which is likely going to be your execute, unless you're just smashing people ala Fengrush with clever alchemist / spriggan's. But that kind of build, again, is hard to pull off without group support.
So what does this leave you?
You can be tanky, and run a bleed build, like heavy impreg + blooddrinker, or auto, or something similar. You can be bursty, with spriggan, hunding, w/e. But you have to know what you want to be before you put the build together.
I personally prefer to be mobile and bursty, with good sustain. One of the most enjoyable setups I've run is (even though you don't want to run it) 7th and coward's gear.
One last thing I will say, is that a 5/6/7 medium stam sorc without something like brass or impreg is very hard to play. The class does not have good damage mitigation, especially from ranged opponents. If you aren't going to use heavy armor and/or S&B, it's going to be pretty tough.
If you're gonna run medium, Blood Spawn is a must have. You won't get away without it on any other class than Nightblade. People might tell you otherwise, but if you really want to perform well in solo situations, Blood Spawn is the only option on a medium armor build. SnB is also much more helpful.
I'd say:
5 Shackle on body, 5 Armor of Truth on jewelry and SnB, 2 Blood Spawn and an Asylum 2H.
Armor of Truth rings come in Robust, so you'll just have a Healthly necklace, but that's not too bad considering that you're in medium the extra health is nice.
