Fully maxed Senche mount feels fast when using sprint but use the bear or camel they feel slower, so does each mount have weight properties

Nope, as far as I know, mount speed is only dependent on your current character's mount training. For each character, you visit a stablemaster to improve speed, and that speed improvement is the same for all mounts on that character.

If you create a new character, then you have to restart the stablemaster training. Speed can be increased every 20 hours, 1% at a time, up to a max of 60% increase in speed.

You might already know that, @JamieAubrey , so are you talking about fully maxed speed, comparing mounts on the same character? I doubt they have weight properties, though it is possible. I have max speed on my main character, and my wolf seems to be the same as my horse.

Maybe it just feels slower on a bigger mount cos you're higher from the floor?

Yeah, my main is fully maxed, I use the Senche it feels faster than using the bear ( on the same char ), I dunno might just be that feeling you know that it should be faster/slower the same happens in racing games, if you drive a slow car you can feel it being slow and heavy compared to a faster car

Might just all be in my head

its the running animation, cause the senche move faster it feels faster where as bears or camel move sluggish so feel sluggish.
    its all in the mind

It's also a function of body length per time. Bears camels and the like are slightly bigger so even though they move the same speed they look a bit slower than smaller mounts.
I feel the same with my guar but in this case it is because it is chunky <3 and i keep looking at its chubby tail

The size of a mount also scales to your character. Nothing looks more frantic than a Bosmer riding on a Dwemer spider. A Nord riding a camel is kind of calming by comparison.
