Reason is with enchanting the max level requires CP150 matts to craft and returns an enchant of the same level. Real reason to do it is for the Kuta and survey. The numbers on the bags may not equate between different crafts since armor and potions and such require a different number of points to craft max level items.

...I make 150cp stuff for my characters in cooking but the writs are making 90cp stuff...but it's what I pull off the board, it doesn't give me a choice...my templar is 50 in enchanting and alchemy, same thing with him, he gets 150cp writs from the same board for enchanting as alchemy, but the alchemy is only 100cp while the enchanting is X...
