Which weapons should I dual-wield with?

I was initially going to go with two daggers, but then thought of mixing the weapons up a bit. Maybe dagger/sword, or axe/sword.

Going for an Imperial Stamblade so maybe a particular combo would suit him? Or can I go purely on aesthetics without too much of a drawback?

If you look at the twin blade and blunt passive under the dual wield skill line you can see which weapons give which bonuses. Daggers for crit, swords for dmg, axes for bleed, maces for pen.

Any class other than a Templar one dagger and one axe had been the way to go for awhile. Just getting back to looking at stamina with a Templar and that is dual daggers since jabs does not proc the bleed.

I prefer either dual daggers or dagger and axe, since that seems to give the most dps on my stam dk at least. My stamina nightblade friend runs the same. If you can get your hands on a few weapons you could test it out yourself as the situation may vary based on build and so on.

I rock the duel daggers for PVE but its more about the look, for damage the level and quality will be the main influence.

One axe and one dagger. Double daggers work too. These are what stamina players typically run.

For my Argonian, I did twin axes, but that's mostly for the bleed...also his name is Bleeding-Claws, and what causes people to bleed like claws? Axes (which is weird but ok)

Since my crit is already up around 70%, I run dual axes for bleed.

I wish those passives counted for 1h&shield.

one axe one mace works for me, put sharp on the mace and the status effect or enchant boosting trait on the axe and it usually does the job for me in both pvp and pve

For pure aesthetics, I go swords. They look badass sheathed or drawn. Recommend Daedric or Assassins Guild.
