Why don't we have the option to line up our characters how we want anyway like WoW / Swtor / Etc.

    Because it's low on their priority list.

    We've been requesting this since beta, and back in the day, the devs did indicate that it was on their list of possible future updates. So throw that in the "maybe eventually" category with jewelry crafting and spellcrafting.
