I am new to this game.

So far I have these following characters leveling.

-> Nord Templar
-> Redguard Sorcerer
-> Woodelf Nightblade

Looks like I have made bad choices with the races.:(

I am a person whose main interest in ESO is solo questing,leveling and enjoying lore/crafting etc.

With these in mind will such bad race choices impact my solo leveling,questing experience ?

    Racials matter only in end-game pve, with min-maxing builds.

    Assuming you were going for Stamina based characters, those races are fine choices. And yeah, solo content in this game aside from Vet Maelstrom Arena is very easy, so it doesn't matter either way.

    I started them as Stamina but after level 10, I respecced all of them as Magicka as it was much more fun.

    Technically racial passives only matter in PvE in veteran Trials (at lest some of them).
    For veteran Group Dungeons it is not that much important - they are do-able (I did most of vet dungeons via group finder on stamblade argonian tank xD )
    The situation with Trials also might change if some Trials group finder tool will be introduced (assuming it will be introduced xD).

    For PvP it matters the most. But even then I am still able to achieve something in PvP on my stamblade argonian...

    As for solo levelling and doing quest it is purely cosmetic. Pick a race that you like. And trust me - there is nothing more frustrating than steering a character that appearance you don't like.

    If you just want to quest and maybe dabble in some casual normal (even veteran, later) dumgeons or PvP? Absolutely fine, missing the racials is no game changer. I did every dungeon on veteran with my argonian templar BEFORE their passives were tweaked to be better for healing.

    If you want to transition into some serious veteran trials or dedicated PvP groups, expect to need to prove yourself and be under pressure to race change for more min/maxed passives.

    Pretty much this.

    You can beat any content in the game without min-max racials, just not as fast or easily as those with them.

    My main is a Nord Templar. Nothing wrong with that.
    In fact mine is a Magicka Templar - and the Nord racials mean I have less to worry about in terms of my own survivability and so can concentrate on keeping the rest of the group alive.

    as @gethemshauna said Racial Passives really only matter for min-maxed PvE and PvP endgame, if you want to be in that top 5% or something.

    Ran three Vets this morning with my Nord Templar as healer, no wipes, everything killed, only deaths due to us all having to much fun in guild chat forgetting we were running a Vet Hard Mode, and three of us died to an AOE, we can sit in for Normal Mode, but need to avoid in Vet. Tank got me up, I got others up and after that we got semi-serious and spanked the hell out of that boss.

    If you are having fun and are capable of doing what you want to do that is all that matters.
