Why do people keep saying the Dwemer are extict?

One of the theories is that a dwemer scholar pissed off Azura (in the TES lore book 'Azura and the Box') and, as a result, the Lady of Twilight caused the entire race to basically disappear overnight.

Could Azura really do that? Extinct an entire race?

Play Tribunal; when you go into the dwemer ruins, you find neat little piles of ashes. Ashes on benches at tables set with plates, ashes underneath armor, ashes at workstations in workshops, in one room you can find 2 piles of ashes on/underneath a bedframe, apparently a couple were sleeping in the same bed when whatever happened, happened.

All the ash piles are in the same locations that live dwemer would have been. Not too much of a stretch to say that the ash piles are remains of the dwemer.

Now, if the writers decide to show how Fyr began his Corprusarium, maybe we could meet Yagrum.......

I thought about this for a bit to. But wouldn't just the living ones have zero summed, meaning that only the most recent things never would've happened?

At this point in time, there is a good chance Yagrum hasn't corprus yet (which should happen somewhen around the time Dargoth ur awakens IIRC), and thus should still be very busy poking around in every corner of Tamriel looking for any clues as to what may have happened to his people, occasionally checking back with his old, old, Old friend Divayth.
Or if he does have it already, he'll be in the Corprusarium, possibly only starting to bloat and busy building his spider walker wheelchair?
In either case, its entirely possible they have him as encounterable NPC somewhere in Morrowind... or if not yet, will add him in some future DLC for that... we'll see I guess.

She char broiled the Dunmer for all time. (That is to say, she's the reason they no longer look like Altmer. The dark skin and red eyes was her doing.) So, the idea that she smeared an entire race out of existence isn't that far fetched.

As someone else pointed out, Bethesda could bring them back if they chose to. The lore is already written that makes it possible. I always believed, since reading about it, that the Dwemer actually caused a Dragon Break and propelled themselves forward in time. You see each other time in history the Brass God was used by someone it caused a Dragon Break. (First being when Tiber Septim activated it and second time is known as "Warp in the West" in ES lore)

Now if MK had his way then the Dwemer would be just dead and gone having become the skin of the Brass God but the lore, even when he wrote it, wasn't definitive and it was always plausible and believable if Besthesda brought them back. It wouldn't surprise me if the Dwemer coming back via Dragon Break in Red Mountain or something was a main plot in a future ES game.

This isn't strictly true. There are Dwemer ghosts and ashed remains in Bamz-Amschend. This includes the second Dwemer NPC you can actually speak to (Radac Stungnthumz), though, unlike Yagrum, Radac is quite dead.

If we're just spitballing here then they could have taken over a pocket of oblivion that is less known/forgotten, something similar to Battlespire or something.

If we truly consider everything we know about the Dwemer, we can be sure that, at least physically, they are dead on Nirn.

Whatever Kagrenac did to the Heart of Lorkhan caused all the Dwemer on Nirn (and only Nirn) to physically desolve into ash. What became of their souls is another matter all together. The ghosts you find in Morrowind were quite possibly Dwemer on the verge of death during the event at Red Mountain who's spirits weren't fully capable of travelling with the rest of the Dwemer and were left behind or maybe they were in-between planes of existence, similar to Yagrum, but before they could fully manifest themselves on Nirn, the event destroyed their physical form with their souls left behind.

The timing might be interesting; don't forget, there are rumors in ESO when you do the quests in Ebonheart, that the Three have stopped their yearly pilgrimage to Red Mountain, and their powers might not be as strong as they once were. Dagoth Ur cut off access at some point, and the Three eventually put up the Ghost Fence to keep the corprus creatures inside, and tasked the Armigers to guard it. It would be really fantastic to see the Ghost Fence built and activated.......

I prefer to think of the Dwemer as being snatched up by a Daedric entity on the way to being "Zero Summed;" and not because of pity.

Who's to say Uncle Sheo didn't put them to work, deep in the caves below Mania, constructing the Aether's greatest automatic Cheese Slicer ever? Think of the worthy pursuits into possibilities! Or impossibilities, even better.

The only proof is that they DISAPPEARED, and the mystery will make for a great future story in the franchise, I'd wager.

Further evidence of this, when Molag Bal states, that the forces of Oblivion are legion and there are far worse masters then he. I like to think the Dwemer are slaves to a Daedric prince and are being forced to resurrect and rebuild destroyed daedra.

Extinct is definitely an interesting concept. What is extinct, what is extinction? We call something extinct if all of a thing are no more, but how do you it is no more? Seems you would need to know what you don't know, but how could you confirm that you know the unknown? We have known knowns (Dwemer used to be) we have known unknowns (we don't know what happened to the Dwemer) but then what of the unknown knowns (the answers that you know but do not really that you know them) and lastly the unknown unknowns (the answers to which we do not even know the question of).

Until we know the question we will not know the answer.

'Extinct' is really dependent on how you see it. There are no dwemer left in tamriel, so from that perspective they are extinct. Having said that though, the snow elves are also supposed to be extinct, yet the dawn guard dlc for Skyrim shows that some are still extant and therefore would be also in the ESO timeline, albeit functionally extinct.

"Locally extinct" might be a more proper phrasing. Better yet; extirpated would be the best terminology to describe the plight of the Dwemer population. Until all known lands have been exhaustively surveyed and all concrete evidence points to a >99.99% chance that all examples of this ancient race are no longer living, then we cannot be assured they are truly extinct.

I, for one, believe the Dwemer still exist within the confines of the many soul gems and centurion dynamos that power their remnant mechanical creations!

That's sort of the whole beauty of the story, that there are unanswered questions. It's worth pondering, thinking about, debating, posting forum threads, and knowing that the answer is intentionally unknowable.
