Why is Morrowind collector's edition giving us armored horses in the place where they eat horses??

Each DLC expansion's collectors edition has always granted a mount that is fitting to what expansion pack it belongs to... So I don't really get why we're getting an armored horse in Vvardenfell, the land where they eat horses. Why not a mini silt strider? Or a giant scrib? Or an Alit? Or literally anything that would make more sense?
Difficulty scaling is desperately needed. 10 years. 7 paid expansions. 22 DLCs. 40 game changing updates including A Realm Reborn-tier overhaul of the game including a permanent CP160 gear cap and ridiculous power creep thereafter. I'm sick and tired of hearing about Cadwell Silver&Gold as a "you think you do but you don't"-tier deflection to any criticism regarding the lack of overland difficulty in the vast majority of PvE content being sold.

"ESO doesn't need a harder overland" on YouTube for a video of a naked level 3 character w/ no CP allocated AFKing in front of a bear for a minute and a half before dying if you don't believe me change is needed.

And before anyone asks the reason they eat horses is because is simply because horses cannot survive in Vvadenfell and the native Dunmer have developed a taste for it, the minerals in the grass growing in soil causes them to drop dead not long after eating it where as the Guar are able to eat it and are much more suited to the alien terrain.

    Simple OP

Statistics don't lie, the people of Rome love horses... err

I mean the People of Tamriel!

    It goes like this:

Horses, Senche, Wolves, Bears, Camels, Elk, Guar (from what I have seen, these statistics are personal opinion). I do however believe if the Elk was a permanent mount and not a limited thing, as well as more affordable it would probably have been #3.

So it's more a matter of convenience (most people prefer horses, we already have armored horse mounts so we can just reskin). Personally I like horses also...

Even though literally every character of mine has a different default mount.

...and besides, horse meat makes the best Goulash!
    ...
    What?
    ...
Its traditional here where I live... or rather, it was, a century ago... these days its far less common, but those of us who know their history remember it anyhow. And you can still get a pretty nifty Pferdeleberkas-semmel if you go to the right places...

Anyways, what I am trying to say is, armoring horses so they don't get slaughtered out from under you as you ride on the battlefiend, caring for them as they carry you or pull your wagons, and then eating them when they do break a leg or something like that as to not waste the meat is not a contradiction in terms - it has been going on for many centuries throughout history.

dwemer live underground and have a network of elevators to travel everywhere, why do they make horse armor when they don't even use horse?
why would they bother with horse when they have those awesome automatons and spiders?

You can ride horses and still eat them. >:)

You just can't eat the ones you ride. There would have to be "riding" horses and "meat" horses. Or, maybe they only eat the horses after they're old and can't carry a rider any more, like in previous centuries when people would use horses as transport, then make them into glue after they got too old to work. :o

Guars are the best mounts! Look at their darling faces and cute little T-Rex arms:

I would have liked one of the standard beige guars as the mount that came with Morrowind, but Dwemer horse is alright too.
