I prefer stam DK for more survivability but it has less damage then a stam sorc. With me DK I can use igneous shield then use vigor for a big vigor heal

In that case:

Sorc for more damage
DK for more survivability

I kinda suspect that Expert Mage further boosts the buff from Hunding's 5pc, but I've never bothered to check.

In PvE, dk will out perform sorc except for aoe. Sorc has better survivability with surge. Both are fun to play. Atm I prefer sorc because I move around so fast

In the case of Stamina Sorcs, that's not quite true. They're less concerned with dealing damage via their class abilities, and more interested in getting utility from them. This results in a very different, and quite potent, stamina build, from anything you could put together on a DK.
