I couldn't find any way to list anything in the guild store from my collections, though, so I wonder if there's something else at play here too. Maybe some way to convert mounts, pets, and assistants to vouchers that end up in your inventory so you can sell or trade them. Or maybe it's just special furniture that you can craft

The target skeleton could be classified as assistant and it is crafted.
I think what you're looking at there is just because of how merchants and mounts can be placed in houses, so they're under the furniture category for housing.

We are currently testing a gifting program in which you can purchase and gift currently available Crown Store items to a friend. As this is in the very early stages, we are not yet ready to open it to everyone. We only allow for the sale and gifting of Crown Store items that are actively available in the Crown Store. Those who are participating in the testing of this program are not able to buy Crown Store items that are no longer available. There were recently a few cases where this was erroneously permitted, and have been corrected.
If you’re interested in participating in this program, you may contact our Support team but please keep in mind that this is currently a manual process. We hope this helps clear up any confusion about the program, and we look forward to bringing it to everyone in the future.
maybe crown crates aren't as popular as they hoped they would be and allowing the stuff to be listed in guild traders would increase sales. I mean the genius behind the swtor version was the one hired to do the eso version and in swtor selling crown crate equivalent items to other players is probably the main reason they were such a success for bioware.
