If you play on a PC, esoui.com has many addons that can give you combat info like an enemy's hp, damage dealt/received, type of attack, and other useful info.
Also, elderscrollsonline.wiki.fextralife.com is another great resource for game information.
Good luck with your searches!
There is not much info on uesp really. As you can see here, all enemy health is either "?" or "varies," and no info on what abilities they have. Yes, there is a lot of info on past ES games, but not much on ESO. I haven't tried any addons, but if they are helpful, shouldn't the info have been posted on uesp already? And the game is almost 3 years old. Either people don't care to post such info, or they haven't been able to get the info.
I can't find this info anywhere, especially for the tougher enemies. Tens of thousands? 100s of K? Millions? If an enemy has three "notches" on its health bar both left and right, then how many HPs does it usually have? Two notches? One notch? No notch? Based on the time I need to kill them, it seems HPs vary wildly. Let's say I have 5K damage per second, I may take anywhere from 5 to 30 seconds to kill an enemy with a no-notch health bar. That means the HP could range from 25000 to 150000. And we don't know what kind of specs they have: resistance, weapon damage, spell knowledge, etc. I have to get killed by one of them to even know the names of their attacks. And all the online FAQs have no info at all. I know we can't freely save and load game like a single-player game, so that makes it tough to research these specs. But these things are a big part of this game, and we are playing a game in which a big part of its mechanics is unknown to us. Contrary to Oblivion and Skyrim, for which online FAQs have all the info on enemy health, defense, attacks, leveling, etc.

One thing to remember, up until just recently, enemies had different health points depending on what zone you encountered them in, and what level or Vet Rank you were, so the answer, it varies, was the correct answer. The UESP is open for you to update if you want to. I certainly don't have any desire to update the Wiki.
So, get an addon like AUI, turn on the Frames and it will show you the exact amount of Health Points each mob has.

Oblivion enemies have varied health too, but uesp has all the detail, such as formulae for health at different levels. No such info for ESO. So again, is such info harder to get in ESO, or do people nowadays just don't care? I'm just amazed that Oblivion and Skyrim have *exhaustive* wiki info on enemy abilities, drops, abilities used, damage amount, etc, etc., and ESO has next to nothing.

The info existed for the other games because you could not see the enemies health as it was a single player game with almost no ui
