Bleed Damage?

Im a returning player and as a fan of this genre I always preferred to use an axe. Before I left I recalled many mobs, mostly undead, didn't bleed so the benefit from the 2hand trait that gives weapons different bonuses gave axes a bleed. Normally I would like this but if my weapon doesn't get its bonus vs undead but swords and maces still did then Im handicapping myself by using an axe. My question is has anything changed to justify using an axe?

I've never heard anything about undead not being able to take bleed damage, but even if that was a mechanic that effects so few of the enemies, its not worth putting a worse weapon in your hand for them.

Dagger and Axe are still the best dual wield combo for stamina pve.

This. I think it was with the thieves guild update (total guesstimation) that all mobs were made to be affected by bleed.

Argueably you may still be nerfing yourself by using an axe, as the dot doesn't stack (subsequent hits refresh it), but I leave it to better mathematicians to say whether a bleed that is buffed with the thaumatage CP can outperform the bonus to damage or penetration from swords or maces respectively.
#1 tip (Re)check your graphics settings periodically - especially resolution.

Even skeletons bleed. AT least, they lose bone marrow or something, I guess.

If you DW the common practice is one axe and one dagger. Also the axe is much less effective with a stamplar since the stamplar mostly uses jabs which doesn't. Proc the bleed.

Dagger + Axe is generally only best for long fights, when the bleed has time to make a difference. Trials boss fights, for instance. For stuff like pledges when a decent group will melt most bosses in a minute or less, the extra crit from 2x daggers will give you better DPS than the bleed from that axe, especially if you are heavily invested into Precise Strikes for more damage on crits.
