I'm going to be making a new character and would like opinions on a DK tank.
Should I be Magic or Stamina based?
Which weapons should I focus on?
Which skills in the dragonknight tree should I be looking to get?
And any other tips about DK Tanking would be amazing
Several builds will work, googling "ESO DK tank" will get you many interesting results.
Good thing is you're more free than a DD or Healer for the "stam or mag" question, because you're not trying to maximize an output as much as they do, only to soak up incoming damage.
So don't be afraid to make your own build. Base job is just keeping aggro and not dying, little by little you'll see what you can do on top of that (some damage, group support, etc...).
And don't trust people who'll tell you that you need insane resistance and 50k health. The damage mitigation is capped at 50% non-blocking (that'll make around 75% blocking), and through armor, buffs (Hardened Armor for you mostly) and red Champion Points you reach quite easily this cap. The MitigationPercent addon helps knowing where you stand for that.
Anything above 50% cap is wasted and could be better invested in sustain for instance (that's where real long-fights tankiness lies)
Regarding attributes you should probably begin with high Health (30-35k) then see how low you can afford to take it and still get away with it, progressively trading it for stam or mag.
A good thing to know: when you pop up a magic shield like Igneous Shield, it doesn't matter if you block or not when you'll get hit. Blocking will cost you stam without mitigating the damage the magic shield takes (except if there's an overflow)
That means that when you're out of stam, you can pop or even spam magshields a bit, and stop blocking for a while to let stam regen.

5x tavas, 2x bloodspawn, 5x eternal yokeda (or 3x ey and 2x agil)
I'm using Akaviri Dragonguard set. Never heard of Yokeda.
Yokeda is trash
Current bis setups are 5 x tava 5 x alkosh 2 x bloodspawn, tava can also be swapped out for ebon, dragon or powerful assault if your healer doesn't mind you being a bit squishier.
Try to get a good mix of stats I usually push for 27-30k health, 30k stam and 15-20k magicka I use both bi food (mag/health, stam/health & tri food depending on what i'm doing)
