Good question, I think the public Dungeons drop Shoulders 95% of the time though.
You get weapons from World Bosses and Public Dungeon Bosses. And, not all that often. So, to get a weapon, and in your case, two, of the preferred type and trait? Prepare to spend some time grinding, or grinding gold to buy it in a guild kiosk.
Me, I would go for the weapons, get something for the set. Then, keep on until I got the preferred one. While Sharpened is good to have, the Set Bonus is even better.
Also, unless your trying to run a two Piece Monster set you can get to 5/5 without a weapon. This will allow you to craft the trait you want. Or, make one 5 piece in Crafted, the other in Dropped as then you get the Jewlery on 3 pieces, 2 armors for the set, then 5 crafted. This lets you run one monster piece, like Molag Kena
So change your set to not need the weapons. 5 piece set is just 5 pieces. Doesn't mean it has to be weapons to get the damage or status your looking for. Never quite understood why somone would pay the 200kg for a sword I found, but low and behold it did sell. I then used necklace, rings, waist and boots and got the same result; only 200,000g richer.

Also you mentioned that you didn't know what 5 piece you wanted with sun and your valkyn/grothgaar set have you considered burning spell weave from city of ash. Maybe you would have more luck getting weapons from there as a run of CoA1 normal takes 10-15 mins. Just not sure which loot table is worse. A chance of weapon or jewels from 3 diff sets or weapon legs chest and whatever else from 3 different sets from world bosses

No problem and I run a destro/destro or resto mag dk that has valkyn 2 piece jewels belt and back bar staff litch and then the other 4pieces and front bar destro I have run as sun, burning spell weave and julianos and spell weave seems to outperform the other 2 in terms of damage but it's hard for me to be accurate as I'm on console.

I was thinking of going 5xSun 2Rings, Necklace, 2Swords.5x from another set (dont know which one yet) Chest, Belt, Gloves, Legs, Shoes. and then either Skoria or the Vault of Madness monster set with the fire around you even if you move around it stays on you.

Well, just mix and match - perhaps you'll get a weapon or two of the other set first. It's not like it used to be where almost no sets had weapon or jewelry pieces. My DK has Silks of the Sun and Elf Bane (but Elf Bane has enough bugs at the moment, being an ancient set almost no one ever used, that I'm not sure it's worth it at the moment).

Yea im trying to get a dw/resto build first and then grind for a destro/resto build to switch from time to time. for me if i play too much with the same gear i just get bored so when i get the feeling of being bored i switch to destro/resto or dw/resto whatever i use then. I will keep that in mind. And yes we need a few more addons on console like buff times etc

By no means was I saying you should change or my way better sorry if it came across that way.
If I could get away with dual wield I would and enjoy having 5/5/2 set bonuses but I mainly PUG with my dk so things like elemental drain, siphon and mystic orbs are myths my character gets to hear about so I need the sustain from Destro.

It's way easier to craft the weapons that you need in the desired trait ... rather than rely on an admittedly slim RNG.
i bought all pieces when they were cheap... nowadays is easier to farm tho
