I'd certainly uninstall all updates as a starting point, see if that makes any difference. In a sense it doesn't matter what the cause is necessarily or whose end it's on, rather you need to find a workaround. That said, sudden crashes are often down to over-heating issues, so check your fans are clean and running normally - taking the side off the case isn't recommended for long but can be useful for testing purposes. Also, when I had a similar problem a while back it turned out to be my graphics card on the way out.

System overheating usually results in a 'blue screen', these problems with ESO are the game not the system, the game crashes not the system, System failures (any part of the installed hardware) at least would result in a error message and also a log in the event files, Eso crashes do not do any of these, the game just literally shuts down as if you had alt-F4, the issue is the game.

That's exactly what happened when my graphics card failed, for a while it just crashed the game as you describe and then finally it failed totally and blue screened the computer.
However, the point is that it is only happening to a relatively small number of players, so that even if there is something that needs fixing in the game it is a compatibility issue with those players' machines such that it may be possible to find a workaround at the players' end until such time as a permanent fix is implemented at the game end.

To start delete the UserSettings.txt file from the elder scrolls online folder under my documents and let the game re create it
Sometimes after updates it gets fudged I don't know how many people I have helped over the last two years do just this and it fixes it
Also if your Shadercache.cooked file is larger then 10mb that's also an issue that file should never be larger then 9mb if it is delete the file and let the game re create it. You will have a long load screen while it does so be patient
