People forget, Khajiit who are bilingual speak the way they do for it is how their native Ta'agra translates over into Cyrodiilic. There are no singular pronouns in Elsweyr. Centurion Burri for example, however, speaks fluent Cyrodiilic, much to the dismay of her mother and pointed out by the Vestige.

Well, and then it evolves into a cultural affectation. There's quite a few Khajiit that are fluent in the other Tamarilic languages, including Raz, who continue using Khajiit first person structure out of habit. Mostly it's there as a justification for why Khajiiti players don't get unique dialog, but still.
