At a meter wide, the coconut crab is about as large as it gets in reality. Larger sizes would require a greater terrestrial oxygen density, which would also lead to hyperoxia. You wouldn't be able to enjoy your new enormous arthropod friends because you'd be dead in the conditions needed for them.
Shellcracker and Titanclaw stretch reality, but they aren't stupidly large. That's good fantasy world-building: bend but don't break.

I thought this was the case as well, but I have gotten some chitin from the brown ones a couple times. I think it is just the RNG stuck in a loop on you.
