I did a quick Google search and it seemed like the more expensive horses had different stats, but then it seemed like this was changed in an update. If this is true then why are some of the horses more expensive?
Back in the day, each horse leveled separately and so different mounts could have different stats. This was changed a long time ago. Now the difference is purely cosmetic. The prices are just left over from when there were "good" and "bad" horses.
The more expensive horses used to have starting stats like one would start with 10 Speed or 10 Carry Weight already applied on purchase. There used to be a fix number of upgrades you could do on each mount so say you had 40 Speed/10 Stamina/10 Carry that would be max upgrades not like today where you can do 60/60/60.
Back around PC launch each horse started with 20% of a stat.
The light brown horse had 20% speed
The black horse had 20% stamina
There was another horse with 20% carry
and i think the 10,000 gold horse started with 10% speed

It's really time they sorted this out, both the pricing and the descriptions as they are simply no longer relevant. All it does now is cause confusion.

Not a bad idea ... though I suppose the horse color (skin) could have something to do with the continued difference in price. Still, with the large number of choices in exotic mounts these days, giving new players one price on a "starter horse" (for in-game gold) makes sense.
