Most stolen items can only be sold to a fence for gold, altho some people are collectors and might decide to keep a few more interesting items.
Stolen armor can be worn or deconstructed (for mats or crafting inspiration) or sold to a fence - or you can use it to get the "indecent exposure" achievement.
Likewise stolen weapons can be used (not as good tho) or deconstructed for mats/inspiration or sold to a fence.
Some stolen recipes, motifs and style mats are worthwhile to launder and then sell in your guild store, if you have one.
Likewise, treasure troves (found in certain outdoor locations) may include leniency pardons to reduce your bounty, or sometimes a set item (e.g. from the darkstride set) which is worth laundering and possibly using or selling at a guild trader.
Certain types of stolen items are also required for a few thieves guild tip-board quests (rarely).
Stolen food items may be worth laundering (or not) for resale, or just for using in your provisioning.
Stolen food items, lockpicks and style mats are excellent for laundering (instead of selling), to level up your legerdemain skill. You want Level 20 in legerdemain to max the passive which allows you to break/force locks easily - very useful in White Gold Tower.

Also keep in mind, to level your Legerdemain skill line, your daily limit is for EACH of Laundering and Selling... not combined. So you can Sell 50 items AND Launder 50 items... it resets every 24 hours... so if you want to level that skill line quickly, you should be maxing out each of those daily.

The button on the far right lets you launder, turning a stolen item into a regular item for use. It's good for recipes or Motifs you picked up.

Lockpicks and food/drink can be used too without landering them.

You can even put on stolen armor, and you're not going to get caught.
You just can't sell it to a vendor, you need to sell to a fence.

Just remember, that most (probably all now) stolen armor or weapons do not give much in the way of mats when deconning, and give so little inspiration that they are not worth deconnng, even after laundering. Best to just Fence them.

Recipes and Motifs can be used without laundering, you just need to Launder them to use the bank to transfer or trade to another player. Same with Ingredients and Crafting mats.
Enjoy the game, life is what you really want to be worried about.
