I'm gathering a specific set, that specific item was already stored in my bank and deconstructed it by accident at a table....
Is there a way to save items from deconstructing?

Yes, role a Mule Character and have them carry the set items you want to keep.
Unless your on PC and can run an addon.
Enjoy the game, life is what you really want to be worried about.
