Well ideally you make the assistants 'cost' something when they are used/summoned. For example the banker can charge a banking fee or the fencer takes more of the items value than other NPC fences (and thus gives you less gold value overall).When I first read that we would be able to summon an assistant well let's just say that's not what I had in mind. Fencer, banker, vendor...Is your goal to turn towns into ghost towns?

The idea might be good long therm. With Orsinium we just explored some of the longest dungeons ever... imagine how useful those assistants will become especially in some endless and hard trials or other dungeons.
