Which do you think is better and why?

I was thinking about exchanging funnel health for drain essense and using veiled strike more for single target.

funnel health = singeltarget range DD + hot applied to you and two other players on every use.
veilded strike = singelt target closecombat DD ability
drain essence = ??? i guess you mean sap essence? pbae with minimalistic heal component per enemy hit

so the question is why do you want to restrict yourself to only 2 of those 3, use all.

Drain Essence needs to be instant cast, more akin to sap essence and not slow down the caster as it does now. If the devs could make it like that, then it would be useful but it's pretty much useless as it is in pvp. For pve it's always been a pretty good skill if you know how and when to use it.

As it stands, sap is way more useful because you don't get caught in a long, useless animation that leaves you vulnerable to being interrupted. This makes it a very risky skill to use in pvp.The devs should have considered this and the fact that sap is a class exclusive and drain isn't.

vampire drain isnt useless, cause CC goes trough block like fear
