Stamina DK Build Advice Needed

I am planning a stamina DK build. I'm a Dark Elf, and I know it's not the best race for a stamina build but I don't feel like leveling a new toon. I wanted to know what gear type composition would be the best for this build. I want to have enough resistance and not be ultra squishy. Will I have enough resistance with 5 medium and S/S?

So what would be best, 1H1L5M, 2H5M, 1L1M5H?

All stamina glyphs on armor, robust jewelry pieces, 2x weapon dmg and 1x stam regen on jewelry. Mundus undecided.
