Azurah customizable interface - lets you re-arrange things on your interface as well a few other handy things interface related Foundry tactical combat - good for damage notifications as well as cooldown timers, it also does a lot of other stuff for combat-related things but I don't much use those parts Greymind quickslot bar - lets you hotkey quickslot items so you can use them rather than have to open the quickslot menu Khajiit speak - if you play a Khajiit character want want your dialogue options to use the Khajiit dialect, this is a great mod for that Lorebooks - shows icons for uncollected lorebooks on map, toggleable like all other POI's Skyshards - shows icons for uncollected skyshards on map, toggleable like all other POI's Pchat - has a few chat-based tweaks like seeing character names instead of account names in guild chat and a lot more but that's pretty much what I got it for lol Questmap - shows icons for quests you haven't started, toggleable like all other POI's Undiscovered - shows icons for places on the map that you haven't discovered yet, good if you're not sure if you've found everything
I know, I know, TES doesn't have mini maps. Well I don't have any sense of direction, and that goes double in virtual worlds. If I don't have a mini map I have to open the full map every 15 seconds to make sure I'm still going in the right direction or I never get where I'm going (or even to the places I randomly decide to go to instead as I'm making my way there).
Binder & Unified Chat Tabs
I'm grouping these two together because they serve much the same function in my mind. Binder lets you copy keybindings between characters, Unified Chat Tabs lets you copy chat tabs and colours. Both save me a huge amount of time because I think of my settings as a constant work in progress and it's an absolute pain to make changes on one character and then have to remember to copy them over to all my others.
Advanced Filters
It adds sub-categories to your inventory and bank tabs. It makes finding the items you want so much easier, and it fits into the existing UI so perfectly I regularly forget it's an add-on.
Harven's Subtitles
I often have to play with the sound off, and have a weird bug where my audio settings keep resetting everything to 80 so even with the sound on I sometimes struggle to hear NPCs over the background noise. Even now there's subtitles built into the game's UI I prefer this version because it's customisable. (Although actually Azurah might be updated to let you move and re-size the default ones at some point.)

I originally got it for the ability to move UI elements (believe it or not I wanted to make it even more minimal by moving things closer to the edges and making them smaller. I also love the ability to colour your targets name, level and health bar by their reaction to you.
Srendarr
Adds buff and debuff trackers. I find this extremely useful because without it I'd be forever forgetting to use consumables, or wasting stamina/magika re-applying debuffs which are still active. I like this one more than the others I've tried because it's highly customisable and fits in perfectly with the default UI.
Banker Shutup
Does what it says on the tin. If I had to hear "Welcome to the bank of Daggerfall" one more time I was going to kill someone, and then I'd have to try and escape the guards and I'm way too lazy for that.

Research Assistant is vital if you're levelling a crafter.
AwesomeGuildStore makes the guild store interface actually usable.
Dustman will stop you being driven crazy trying to sort your loot by hand.
No, thank you! to tone down the number of messages and notifications the game pushes at you.
Slightly Improved Experience Bar keeps the XP bar on the screen at all times and saves you opening and closing the character window to track your levelling.
PublicDungeonChampions shows you the locations of bosses in public dungeons, who can be hard to find otherwise especially if dead.
Awesome Guild store (better guild store search and saves your searches)
Advanced Filters (breaks my bank and bags down into better categories)
AUI (better UI for me with keybindings for quickslots- hate the quickslot wheel, minimap, buffs and debuffs and yeh I'm weird, I like to know exactly how much health that boss has, not guess at it)
Loot Drop (I like to autoloot but I like to see what I get, too)
Multicraft (puts a slider on your crafting to make multiple potions, food etc with one click)
NoThankYou (lets you block raid notifications, MOTD changes, delete confirm on mail and much more)
Sous Chef (just to track what recipes my Prov knows when I find them on an alt)
Swaps (saves custom skill bars so it's just a couple clicks to swap them)
Lorebooks, Skyshards, Lost Treasure, Destinations (because I'm OCD lol)
Azurah (so I can move my stock UI pieces around)
CyrHud ( so I can see at a glance what's going on at keeps. Opening your map in Cyro can be hazardous to your health)

However I don't use all of them all the time, and in fact some of them I hardly use at all now.

Minion works great to manage the updates. Just run it as administrator (something I have to do now that I am on Win 10 for some reason) and it updates everything within seconds. I do it once a day, before playing.
