The only weapon skill line with a taunt in this game is sword and shield. This is also the best skill line for defensive (de)buffs and for increasing your blocking effectiveness, the most efficient form of damage mitigation, especially in PvE.
As for your class choice DK and templar are pretty close to each other, and most is based on personal preference. Both have a variety of tools to mitigate damage and support their teammates. DKs however usually have a better time sustaining their resources due to the battle roar passive, while templars can support their group more directly with some burst heals here and there.
1-Hand and Shield, because it has one of the two taunts in the game with the Puncture line. Other is avail to any build in the Undaunted Guild line, Inner Fire and its morphs.
Taking damage, depends on your gear and build, not your class.Heavy for that.
The actual weapon depends on what you want it to look like.They are all about the same, as they can all have the same traits. Just no Bows or staves on your main slot. Pretty much tho, I would recommend putting a Resto Staff in your second slot for self healing. The differences show up in Dual Weild DPS, not tanking.
With Max Traits in Dual and its passive Twin Blade and Blunt,
Axes: 50% greater chance to cause a bleed
Maces: YOUR weapon attacks ignore 10% of opponents Physical Resistance
Swords: Each sword increases weapon attacks by 2.5%
Daggers: Each dagger equipped give 5% Weapon Crit
