So what do I do with trophies once I pick them up. Sell them?

    Which trophies are we talking about?
    The ones you get from mob drops should be auto added to your achievements. Then you can sell them.
    The ones you get from quest rewards have some interesting effects if used. Those I am saving on a mule to (someday) maybe display in a house.

    yes, like Chattering Skull and Dynamo Gear (sp?). The quest reward trophies are especially annoying because they should instead be consumed and turned into something like a skill, but under "collectibles" so you can cast it from your quickbar

    The Trophy drops from mobs in Imperial City are used to open Vaults, if you can collect enough (60 for the Jewelry vaults and 150 for the armor set vaults) of the appropriate trophy item - or trade them with other players.

    Special rare trophy drops from creatures for that creature type (e.g. Chattering Skull for skeletons) are now labelled as "collectibles" in your inventory, and you can safely vendor them. You can't put them in the bank anymore, unfortunately (changed in 2.1.x). Quest reward "trophy" items (which usually have some short cosmetic effect when you "use" them) can be stored on a mule alt if you really want to keep them, or just deleted. Most are useless.
