If I switch mounts does the new mount retain all of the stable training? (Speed, Stam, carry capacity)?

To add to the answer already given, this was a change introduced with 1.6. Previously you fed your individual mounts, and you couldn't feed a mount more than 50 times. When 1.6 dropped they changed it so that you no longer feed your mounts, and instead you take riding lessons that apply to your character, and that max out at 60 in each category. That means that regardless of which mount you choose to use you'll have the same speed, mount stamina, and carrying capacity. This change was clearly made with the Crown Store in mind in order to make it more attractive to buy multiple mounts. If they hadn't made this change, nobody with a leveled mount would ever spend money on a new mount in the Crown Store because they'd have to start all over from scratch.

In this iteration it's not really training the horse, it's training the rider.
Tenesi Faryon of Telvanni - Dunmer Sorceress who deliberately sought sacrifice into Cold Harbor to rescue her beloved.
Hisa Ni Caemaire - Altmer Sorceress, member of the Order Draconis and Adept of the House of Dibella.
Broken Branch Toothmaul - goblin (for my goblin characters, I use either orsimer or bosmer templates) Templar, member of the Order Draconis and persistently unskilled pickpocket
Mol gro Durga - Orsimer Socerer/Battlemage who died the first time when the Nibenay Valley chapterhouse of the Order Draconis was destroyed, then went back to Cold Harbor to rescue his second/partner who was still captive. He overestimated his resistance to the hopelessness of Oblivion, about to give up, and looked up to see the golden glow of atherius surrounding a beautiful young woman who extended her hand to him and said "I can help you". He carried Fianna Kingsley out of Cold Harbor on his shoulder. He carried Alvard Stower under one arm. He also irritated the Prophet who had intended the portal for only Mol and Lyris.
    ***
Order Draconis - well c'mon there has to be some explanation for all those dragon tattoos.
House of Dibella - If you have ever seen or read "Memoirs of a Geisha" that's just the beginning...
Nibenay Valley Chapterhouse - Where now stands only desolate ground and a dolmen there once was a thriving community supporting one of the major chapterhouses of the Order Draconis

You nailed it on the head good sir (or madam). This was exactly my train of thought when I asked the question. They made a smart move because I am really liking the look of the new spotted kitty

Of course, the slightly sad thing is that when they announced this change prior to 1.6, even after we knew the Crown Store was coming it didn't even occur to me that the mount changes had anything to do with the Crown Store. All I could think was "holy shamoley, my horse can be +60 speed and +60 capacity and +60 stamina!" It was significantly later that I thought about why they made those changes.
