Returning Player Question on Stat Points

So I haven't played much ESO...ever. But I always did like the game, and have been really getting into it lately. I am really confused though on how my stat points should be distributed for Health, Stamina, and Magicka properly to avoid a reset. Right now the character I am actively engaged in is a level 25 Templar. I plan to play healer role at end game, but for leveling I am mixing DPS while still trying to stay a competent healer for groups / dungeons. I have been putting all my points in Health so far, because all of my gear is always enchanted to increase maximum magicka, and my food also increases maximum magicka. I am curious, how are most people spreading it out these days (while leveling and at max level)?

I play as a Melee DK therefore I have no attribute points in my Magica or Health, so far everything has been fine I just have to pay attention more. I wear heavy armor and use 2H only so I consider myself the odd type of person but personally I like dealing damage but I like surviving more, if that makes any sense.

I've heard a lot of things about templar lately, I forgot the name of the ability but supposedly their damage shield ability was getting nerf'd in the upcoming patch for Imperial city.

First off you need to decide whether you want to use stamina or magicka as your primary resource. If you're going to use a melee weapon (other than a shield, for the most part) or a bow, you probably want to focus on stamina. If you're ok using staff abilities and class skills, you need to focus on magicka. The only reason I exclude the sword and shield setup here is because some tank builds and even some caster builds (primarily dragon knights) like to mix 1h/shield with light armor to provide more magicka to spam class skills with, using the shield skill line solely for passive boosts to damage mitigation.

Once you pick the type of character you want, then you get to the attributes. In either case, there are two options commonly used:

Option 1: Put 100% of your attribute points in health, and enchant all 7 pieces of your gear (8 with a shield) with your chosen resource - stamina or magicka.

Option 2: Put 50-75% of your attribute points into your resource, and the other 25-50% into health, and mix&match your armor enchantments as needed.

For the most part you want to keep the two about even. I run a 60% stamina / 40% health split on my attribute points, and all 7 pieces of armor are enchanted for stamina. This gives my character extremely high damage output, but he's definitely squishier than someone with a more balanced or health-focused attribute spread.

Health isnt necessary for non-tanks or non-pvpers until you get into the veteran ranks and endgame content, where you need a certain minimum level of health to survive. For damage dealers and healers it's usually 20,000 health at VR14, while tanks reach for 30-40k. Once you reach the minimum, you can focus more on your resources.
