I have arthritis in my hands and it does cause me some pain holding down the sprint key - I often get left behind in Cyrodil because of it.

All Horses will Sprint past their Stamina Pool. What Stamina does on a horse is prevent you from being knocked off. If you have a pool of Stamina, you can take some hits before you are de-horsed.

Because Stamina on a horse has nothing to do with Sprinting. It is about getting past an enemy and staying on the horse. This can serve you tactically by allowing you to get to the battle quicker in PvP. Where as the other team will try to unhorse you to slow you down. So you conserve your resource that keeps you on the horse until you need it in battle. Or you use it up to get to the battle with the increased risk of not getting there in time if you get knocked off.
They should have called it Resilience or something else. However since the horse's Stamina Regen is keyed to the player, I guess they called it what they did.

Ah, okay. So the player still has to hold pressure on a button of some kind.
Well, suppose that might be easier than holding down a key on the keyboard with my thumb.
