You can download addons that scan the guild stores and tells you average price how many have sold etc. Or you can post to chat and ask for a price check and sometimes people will link the price for you.

I've often wondered ... Do you add a straight figure, is it a percentage. ... Though judging by the stuff in guild stores its a case of go big or go home

I have noticed that some guilds are definitely a go big or go home trade base. Myself, when I sell things I terms to look at a few guilds and price about 10-20% over the lowest price.... Isn't always fruitful, but works most of the time. Con sole market is pretty high and volatile

Agreed, on Console, check a couple guild traders and price accordingly. Now if there are none in your guild store, you can price a bit higher ;)

Not to sure about how PC pricing goes, I'm on console.
I'll sell a stack of 200 ingots anywhere from 1k-3k gold depending on what type of ingot same with ores
daedra hearts in bundles of 5 for around 8-10k
palladium in bundles 5 for 6-7k
    tempering alloy 4k a piece
green recipes 300 gold a piece
    blue recipes 1200 a piece
    grain solvent 2-4k,
copper in bundles of 10 for 6.5-7k
    Purple recipes for 2.5k
    Dwemer frames for 8-10k

Within the last week I've made a good chunk of change with those prices. I adjust them every couple days according to other guild store prices.
