For PvE Leveling? No you are not crazy, any build can be made to work for that content. But, still be magic focused for the sorcerer.
For PvP? You would be better off to have a focused magic or stamina build, and with a sorcerer, be magic focused.
For PvE Trials? Depends on who you run the trials with and what they want (fast time, no deaths, just make it to the end) but you probably wont' get invited to any raids if your Stamina Sorcerer.
In other words, do what you want, just don't build a stamina sorcerer.

I'm playing a combat DK (Heavy/Medium armor dual wield - lots of stamina) and a magic only DK (magicka only) and they're both working well.
What's so great about a DK? They don't really do anything amazing and their fire magic is just stupid. The chain is just irritating and that fire slash is weak. Besides the stonefist is so sort range that it doesn't do any good anyway.
The Templar, IMO is the best guild for warrior/magic and the Sorcerer is the best for magic, period.
Nightblade, on the other hand, is an AWESOME build. I have a few of them ranging from bow only through shadow assassin and they all seem to work great. Siphon is my friend!

I have a Magic Templar and she just got the 10,000,000 Dungeon Healing Achievement recently. I only use two skills from that tree, Breath of Life and Repentance (no cost spell that gives Stamina and Health). The others may have some use too, I have leveled most of them to at least Morph stage. I don't think I have ever used the Negative effect ones. But you will use more of the Healing skills in a group than you ever would solo. I mostly solo so the two I mentioned are all I need.
