What's best?

I am trying to make 1 of each class, all with different races and weapons and reaching end-game with them. I haven't fully decided what I'm going with but this is what I have so far;

Dragon Knight:
- Orc
- Two-Handed
- (Back up) One Handed & Shield
- Dragonic Power + Earthen Heart
- Heavy Armour
- Werewolf

Nightblade:
- Bosmer
- Bow
- (Back up) Dual Wield
- Siphoning + Shadow
- Medium Amrour

Sorcerer:
- Dunmer
- Lightning Staff
- (Back up) ?
- Daedric Summoning + Dark Magic
- Light Armour
- Vampire

Templar:
- Argonian
- Restoration Staff
- (Back up) ?
- No idea
- Medium or Heavy Armour


As you can see I'm in need of most help with the Templar, but help with the others is appreciated too.
