Ok guys so I'm in game right now. My mate just told me some awesome info. I love playing 3rd person. Anyone else that does, just saying now, your welcome.
In options you can adjust FoV for third person. But you can crank it even further in game. Almost a birds eye view.
Hold down on the D-Pad. Should be same on PS4 but don't have one. Its the button you switch 3rd and first person with. While you hold that button, use your right stick to zoom allllllllll the way out.
No info was posted in game saying you could do this, so hope it helps some.

I also didn't know about it til ESO! I've been a first person kind of player with the ES series but have recently tried 3rd person more with this game. I saw this helpful tip a little while back, though, but I'm guessing there are still those who don't know about it so someone sharing it is always appreciative.
You're right that some things like that are missed.
