This is just my opinion, but here goes:
Altmer - Templar/Sorcerer
Argonian - Nightblade
Bosmer - Nightblade
Breton - Templar/Sorcerer
Dunmer - Dragonknight/Nightblade
Imperial - Any
Khajit - Nightblade
Nord - Dragonknight
Orc - Dragonknight
Redguard - Dragonknight
Dragonknight seems to be almost made for the Nord... Because Skyrim.
Sorcerer, on the other hand, is quite flexible, but probably Altmer as they're the more magically inclined. That being said, the Telvanni, whom are typically Dunmer, are also amazing Sorcerers.
Templar will always be a Breton healer in my eyes, but the role could probably be more Imperial if you're thinking of a crusader sort of thing.
Nightblade is tricky, Bosmer and Khajiit come to mind, but the latter is more outright thief whereas the Bosmer do have more elusive nature. That being said, Argonians can be shadowscales, though they are typically assassins. It really depends on how magically inclined your nightblade is.
In terms of race : class
Altmer - Sorcerer
Argonian - Nightblade (shadowscale) / Templar (healer)
Bosmer - Nightblade (more an archer / thief theme here)
Breton - Templar (healer) / Sorcerer (magically inclined race)
Dunmer - Sorcerer (Telvanni) / Dragonknight (pyromancer sort of thing, though other skills not so much)
Imperial - Templar (tanky in my eyes, but ultimately quite versatile.)
Khajiit - Nightblade (more akin to thief)
Nord - Dragonknight
Orc & Redguard - none of the above. Orc are more berserker type whereas Redguards are swordsmen. All in all they could be Templars or Dragonknights if stamina specced sort of thing.
There are a billion stories never told or written down. The stories that are shouldn't be used to stereotype entire groups.
There are a few immutable laws of every game world, but the only "lore" that matters for a character is a single question...
