I think the other thread has some great feedback for you.
Vampire and nightblade is in my opinion a very bad match. I also strongly suggest staying away from vampirism on any character. The reason NB and vampire are a bad match is cause vampires are glasscanon. You sacrifice health regen and make yourself more vulnarable for firedamage in order to get more stamina/magica and so more dps. As nightinglbade is great in kiting and killing down single tartgets, you don't have much from the extra stamina/magica. To properly counter the badsides, you need AoE damage (something the NB lacks).
I think the easiest class to play is a stamina dragonknight. The best races to go with that are Imperial or redguard. A good third would be nord (if you don't have the explorerspack or imperial edition and insist in staying in the ebonheart pact). If you want to try vampire again (which I suggest you don't), you can also choose dunmer (dark elf), cause they come with fire resistance, outcanceling the extra firedamage.
Stamina dragonknights have very good dps with 1 handed and shield or 2 handed weapons, and also they have a very good defense. I personally use 5 peaces of heavy armor, 1 light and 1 leather (the later are so I level up those lines for any future endgame use). the good dps combined with strong defense makes it very viable in my opinion and easy to play.
Gender has no effect at all on the game play. But to answer my preference and why. I'm a dude in real life and prefer playing female characters. The reason is that I prefer playing third person and I rather look at a nice womans back then a hairy male one But that is totally personal. Play whatever gender you prefer.
"Ok then just let me make this one question plz, do you believe that if i remove vampirism my gameplay experience and difficulty overall will change, ty for your help, you seem to know your eso"
A: Yes I do believe you should atleast try it. nightblade will still be a single target class. That doesn't change it. But in general mobs in ESO are mixed. So if there is more then just one or two, there will always be something like a pyromancer in it and often more. So I estimate that without vampirism you can survive agaisnt larger mobs for 75% longer, that should give you enough time to kille enough mobs to take the pressure off. It might still be that you want a class more strudy or more specialised in AoE, but atleast you know and experienced the class in its full potential instead of limiting yourself to a poor setup.
If you do, don't forget to reset your skillpoints first. All skillpoints invested in the vampire skillline will be gone when you cure yourself. So better to not have any points invested in it when you do so.
