You forgot Master Merchant. This is a must have addon.
I run LUI extended as well. I use Kill Counter for PvP. Also, you can get a MiniMap add on so you don't have to look at the map so often.
Sky Shards is nice too.

Advanced Filters (I seriously don't know how people can play without this) No, Thank You! (tons of options for removing useless notifications and other annoying things) AwesomeGuildStore (if you ever plan to buy anything from a guild store) Research Assistant (if you ever plan on researching stuff for crafting)
Wykkyds Gaming Suite + Wykkyds Framework add a lot of nice little things to make your experience more enjoyable and natural. All toggleable.
Lootdrop makes it so you don't have to open your inventory after every corpse loot. An indiscreet popup on the bottom left of the screen quickly shows you what you just looted.
Crafting Material Level Display Updated adds a little more info to tooltips for crafting materials, so you don't have to look things up on the internet constantly.
AI Research Grid is a nice compliment to Research Assistant mentioned above.
It will vary greatly depending on who you ask. My approach, which has worked well so far, is to wait until I find I want something that's not there, or want to get rid of something that is, and then go looking for an addon that can do it.
My must-have addons at the moment are:
Advanced Filters - Adds subcategories to your bank and inventory, so for example you can look at just provisioning materials. It's a small thing but incredibly useful and it blends in seamlessly with the default UI.
Azurah - I originally got it simply to be able to move the default UI around, but I really like some of the other features like being able to colour target names by their reaction to you (players, enemies, allies & neutral) and the option to have numerical overlays on your health, magicka etc. bars.
Banker Shut Up - Does exactly what it says, silences the bankers so they don't drive you crazy with their one line of dialogue. It also adds mute buttons to other NPCs so you can shut them up if you want to.
Binder - It lets you save and load multiple sets of keybindings. I have 6 characters and I'm constantly tweaking my keybindings so this saves me a huge amount of time. If I log into a character I haven't played recently and I realise they've got an old set I just type /binder load Main and they're up to date rather than me trying to remember every change I've made since I last played them.
Mini Map - This was the first one I got. I have no sense of direction, and it's even worse in games. Without a mini map I'm constantly running off in completely the wrong direction.
S'rendarr - Adds (highly customisable) buff and debuff tracking to the UI. Without it I was forever forgetting to use food or wasting attacks re-applying debuffs that were still active.
Unified Chat Tabs - Like Binder, but for chat settings. Most importantly it lets you save and load your chat colours instantly, instead of having to tweak each one individually.
