Do not pity the dead, Harry. Pity the living, and, above all those who needs a bot to finish a game.
Are you sure that the Claw of the Dragon v12 is unobtainable?
According to this post someone got it as a drop as late as January.
Although I can't prove that they did it, I figured that it would be good to get a verification.

Once every 2-3 months I use Jaedi or Lire by mistake, but still got some left
PS: There will be quite a lot of unobtainable stuff when the provisioning ingredients expire.
I don't like items that can never be obtained if you started after a certain point in time.

The Daedric artifacts were a thing in Beta. Honestly they were probably never supposed to appear on live, and were a neat, "here have a cookie" for beta players before launch. You can still bring the items up with the right href code, but that only lets you link them in chat.
The Mercenary contracts were, from what I understand, bugged and never actually worked properly, so they were cut.
Trueflame and Hopesfire were, probably like the artifacts. They're unique weapons in the setting, and having them available to players would be... odd. It's worth pointing out, at launch there was a lot of weirdness with the drop tables. There were people reporting that the mudcrab table had the Daedric motif book on it, for instance.
The Hireling chests were consumables. You'd crack them open and pull out the hireling rewards. They got phased out in favor of the items being in the mail directly for a couple reasons. 1, there was an exploit that let players pull the containers out multiple times. 2, there was an exploit where you could collect containers for one character, move them to another, and get better rewards from them. The whole system was scrapped and replaced with hireling mail that paid out in materials directly.
Collector's Coinblade was a low level green greatsword quest reward in Vulkel Guard. As I recall, it wasn't actually impressive in any way, and I think I actually vendored or broke mine down. So, you're just missing a uniquely named Altmer style, iron greatsword.
The quest itself was removed for some reason, with the suggestion that it would be coming back. It might be slated for a return with the justice system (the quest involved shaking people down), but I don't know.
Forward camps are a mechanic that's being retired from PvP.
The Runes are also buggy. They're not really supposed to be in the game, and provide... erratic enchantments. I think they're the essence runes used "under the hood" to create some of the weirder enchantments you can get off items, but I've never seen them first hand, so I'm not sure.
So... no, at least on the stuff in here, you're not missing out on anything.

I guess what I am more thinking about are the collectible items. I want to be able to get them allthe few random PTS and Beta items here and there don't bother me one bit.

Well, then literally the only thing off that list that you're missing is a uniquely named green level 5 greatsword. It didn't even have a trait or enchantment.
Most of the things in that list are either buggy, consumables, or both. The only collectables you can't get now would be the event exclusive pets. At least, without resorting to ebay. Stuff like the beta participation monkey, or the convention Pig. After 1.6 you won't technically be able to get the Mannimarco, Golden Saint, or Dark Seducer costumes... but you'll still receive them if you qualify, they just go directly to your collection tab now. The same for the skeletal transformation gem. They're just not inventory items anymore.
EDIT: Wait, you might be missing out on the subscriber era loyalty rewards. The Ice Wraith and Dwemer Sphere pets, as well as the Sheo costume and the Senche mount. But, you probably already knew that.

Will the loyalty rewards ever propagate to us as we get the required subscribe time?

Nope, or at least not unless they change their minds. Right now those are specifically for players who were here by a certain date and remained with the game. Like the beta monkey and (to a lesser extent) the preorder scuttler.
EDIT: we do know other senche mounts are on the way, though... so that's not a complete lockout.

Dooooh
The way this page reads to me I thought that once my account passed the 3 month and 6 month subscription threshold I would get the cool pets: http://www.elderscrollsonline.com/en-us/news/post/2014/08/21/eso-subscriber-loyalty-program

Yeah, but they've also said the program was being retired... though we don't know the exact circumstances of how that will work. It's possible that you'll still get them as you pass those milestones, from being in the game when it was subscription... but I wouldn't want you to get your hopes up, it's quite possible once March 16th rolls around, if you didn't get them, you're not going to. I just don't know. Sorry.
